Salmon With Fresh Salsa

Living in Northern Lower Michigan has many advantages but I have never thought an early spring would ever occur in March...but it has!
And with spring brings thoughts of healthier eating and colorful dishes...bring it on!

How about some salmon? It is healthy, especially if you grill or broil it. We have not fired up the grill yet...I seem to think Ben is looking to purchase a new gas grill!

I opted to broil the salmon and decided to make a fresh fruit & veggie salsa and believe me I was not disappointed with this entree'.

I served the salmon dish with fresh fruit and steamed broccoli, now that is healthy and colorful!!!

Salsa:
11 oz. can of mandarin oranges, drained
1 medium English cucumber (I didn't peel)
1-2 green onions, chopped
1/4 cup Raspberry Blush Vinegar
Fresh Dill (for garnish and also chopped for the salsa- 1-2 Tablespoons

Mis everything together and allow to mellow in the fridge for a few hours or the day before serving!
